Perhaps one of the persons mentioned in the query is buried in Mount Pleasant
Cemetery, Toronto, where there is a gravestone for Moses Smith KELLOW
1834-1907 and his wife Ann MARTIN 1832-1916.
In case it may be of interest, some other emigrants from Cornwall are
mentioned on a gravestone in Hagerman Methodist Cemetery, Markham twp
York co, just north of Toronto:
Jane KELLOW 1831-1897, wife of John WEBBER 1827-1904,
also Elizabeth KELLOW 1826-1886, wife of Thomas JEFFERY.
Both Kellow ladies are stated to be natives of Cornwall,
while John WEBBER was from Devonshire.
The index to the 1871 census for York County shows John WEBBER
as a hotelkeeper in Markham twp.
There is no entry for Moses SMITH KELLOW in the index for Toronto city,
showing that he was not there by 1871.

This is in answer to the part of the query re availability of school records it does not matter what school she went to, as
"unfortunately, there are few actual lists of pupils or students at the
Archives of Ontario, and those that do exist fall mostly within the
100-year privacy restriction."

School boards also have restrictions on what can be seen, on any records
they may have in their archives.

Can there have been two couples named Thomas and Julia KNIGHT residing
in the township of South Dumfries?
There are gravestones for such a couple in the Maus or Paris Plains Cemetery,
but they seem to be older than the couple mentioned in the query:
Thomas KNIGHT died 20 Oct 1863 aged 49 yrs
Julia Ann wife of Thomas McKNIGHT died 21 Oct 1866 aged 66 yrs 4 dys.
It is difficult to reconcile these gravestones with the couple mentioned
in the query, in spite of the names and place.
However in the Brant County Marrriage Register page 211 there is likely
a second marriage for the Julia of the query:
22 Sep 1868 William McCORMICK 56 of Drumbo
married Julia KNIGHT 37 of South Dumfries, born Hamilton,
dtr of William and Ann SMOKE, Alfred KNIGHT, witness.
The index to the 1871 census for Blenheim twp Oxford co shows Julia McCORMICK
41, perhaps widowed for a second time.
The details of her first marriage are found on p75 in the Gore District
Marriage Register:
Thomas KNIGHT and Judy SMOKE married 9 Dec 1847 by Rev. James VINCENT,
Congregational minister, witnesses Jacob C. CRANE and Charlotte POWERS.
Also in the Maus Cemetery are gravestones for William SMUCK 1804-1868
and his wife Ann SWARTS c1794-1863, presumably the parents of Julis.
SMUCK, from the German SCHMUCK, was often "Anglicized" into SMOKE.
